Sorry, Chipotle, but these healthier-for-you guacamole recipes have you beat. Guacamole is the Paleo panacea, a solution to all our non-dairy creamy needs.
In every savory application where we might use mayonnaise, sour cream, or hummus for a creamy agent – think sandwiches, tacos, salads, and good old fashioned dips – guacamole makes a worthy substitute. In some cases, it even fits into the sweeter end of the spectrum – make a quick mango salad and throw some guacamole on it. Trust us.
Guacamole purists recognize that the good stuff requires only perfectly ripe avocados, lime juice, salt and cilantro. All of the decadence is housed in Hass avocados, sliced at peak ripeness to reveal buttery, pliant but not-too-mushy flesh. Whether you preserve some chunk or opt for full smoothness, you’ll love the sustaining, rich flavor of the healthy fats in avocados.

Don’t fear the fat, either. Avocados are composed mainly of monounsaturated and saturated fats, which, like the fats in olive oil, provide sustaining and necessary energy. They’re also chock full of macronutrients like Vitamin K1 and Vitamin B9 – absorbed easily because the fats in avocados help the absorption process along.
We’ve provided you a basic recipe for guacamole that bests even Chipotle’s recipe – they’ve got similar flavors, but why mess around their red onion? If you’re looking for more exciting variations, we’ve got uber-rich, sweet, and spicy covered. Not that we have to convince you, but crispy bacon adds texture and bacon flavor (technical term) to an already decadent treat. On the sweeter side, mini sweet peppers and small and sweet tomatoes brighten up your dip. Finally, quick-roasted Pasilla peppers and jalapeños coalesce into an intensely spicy guacamole, satisfying the most fiery of appetites.
