Croutons add a crunch to any salad and are great for repurposing stale bread. Use any leftover gluten-free bread of your choice or quickly whip up same-day bread with a sheet pan and pizza slicer. Tip: Opting for a flatter bread will quickly get you that crisp texture ideal for crispy-crouton making.

Toss your bread bites with fresh herbs and garlic powder for a zesty bite and subtle earthiness. Added olive oil will help marinate the herbs into the bread and create a golden hue when toasted in the oven.
For the optional bread recipe (although, any crusty Paleo bread will work), begin by mixing the dry ingredients together in a small mixing bowl. In a separate bowl, whisk together the wet ingredients. Combine both mixtures and vigorously stir together until it becomes a thick dough.
Next, transfer the dough onto a prepared baking sheet and spread into an even layer (about half an inch thick). Bake for 25 minutes and remove from the oven. Let it cool on the baking sheet for 20 minutes, or until the bread is nice and crispy. Use a pizza cutter to slice into bread cubes.
To make the croutons, place the cubes into a medium mixing bowl and toss with olive oil and herbs. Combine until fully coated and bake for 10-12 minutes, or until golden brown.
Enjoy with your favorite dish (like this Brussels Sprouts Caesar Salad). Keep leftovers in a sealed container for up to 10 days in a cool, dry area or 30 days in the freezer.

Ingredients
- 4 large eggs, room temperature
- ½ cup olive oil
- ½ cup flax meal
- ¼ cup coconut flour
- 1 t baking powder
- 1 t sea salt
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a small bowl, stir together the baking powder, salt, coconut flour, and flax meal.
- In a separate bowl, whisk together the eggs and oil until fully combined.
- Add the dry ingredients to the wet ingredients. Stir vigorously until well combined.
- Place the batter onto the prepared baking sheet and spread into an even layer (about half an inch in thickness). Bake for 25 minutes, or until golden brown.
- Remove from the oven and let cool for 20 minutes on the baking sheet. If using for the crouton recipe (below), use a pizza cutter or knife to slice into cubes!

- Place the bread cubes into a medium mixing bowl. Toss with all the remaining ingredients until fully coated.
- Bake for 10-12 minutes, or until golden brown.
- Enjoy immediately or store them in a sealed container for 10 days.
