Turmeric is a natural anti-inflammatory that adds a warm, sweet, and mild flavor to this recipe. Along with giving your hummus a nice golden color, it’s great for aiding your digestive health. Add this spice to other fall-inspired recipes like roasted acorn squash or honey roasted turkey.
To get started, place all the ingredients (except for the garnishes) into a food processor and mix on high speed. Pulse until the mixture is nice and smooth, scraping down the sides if necessary. If the mixture is too thick, add up to one tablespoon of water to soften it up.
When ready, garnish with fresh herbs and pumpkin seeds on top. Serve immediately and enjoy or refrigerate leftovers for up to four days.

Ingredients
- 1 cup raw cashews, soaked in water overnight and drained
- 1 cup of pumpkin purée
- 1/3 cup of olive oil
- 1 T lemon juice
- 1 garlic clove
- 2 T tahini
- 1 t ground turmeric
- 1 t ground cumin
- ½ t curry powder
- ¼ t salt
- ¼ t ground black pepper
- 1 T pumpkins seed, for garnish
- 1 T fresh parsley, for garnish
Instructions
- Mix all the ingredients (except the pumpkin seeds and fresh parsley) in a food processor on high speed, or until you have a smooth and creamy texture. Scrape down the sides of the food processor as needed. If it’s too thick, add 1 tablespoon of water or olive oil at a time.
- Place the pumpkin hummus in a small serving bowl and garnish with parsley and pumpkin seeds.
- Serve immediately and enjoy!
