Tahini is common in Middle Eastern and Greek cooking, often found in hummus and made from grinding sesame seeds into a paste. Tahini’s sesame flavor is robust with a roasted aroma, making it an ideal base for marinades. Combined with heart-healthy extra virgin olive oil, fresh lemon juice and oregano, the marinade hits on all the savory notes for a mouthwatering grilled chicken. To start, stir together ingredients for marinade in a medium mixing bowl, reserving about ⅓ cup for serving with the chicken. Add chicken thighs and swish around to coat (you can also use bone-in chicken thighs if preferred). Cover and refrigerate. This step is when the magic happens: the chicken thighs get time to soak up the sesame flavor. Allow at least 2 hours to ensure the flavor sticks to the chicken. Heat grill or grill pan over medium heat and grease well with extra virgin olive oil. Place chicken thighs on grill and cook 8 minutes each side. Serve the tahini-marinated chicken hot with reserved marinade.

Ingredients
- 1 lb. chicken thighs (boneless/skinless)
- 1/3 cup tahini paste
- 1/3 cup extra virgin olive oil
- 2 T fresh lemon juice
- 1/2 t dried oregano
- 1/4 t sea salt
Instructions
- In a mixing bowl, whisk together tahini, extra virgin olive oil, lemon juice, oregano and sea salt. Reserve 1/3 cup of mixture for serving. Place chicken thighs in bowl and swish around to coat. Cover and marinate in fridge 2-8 hours.
- Preheat grill or a grill pan to medium heat and grease with olive oil. Place chicken thighs on grill and cook 7-8 minutes each side or until fully cooked through. Serve hot with reserved sauce.
