Thick, light and airy, this Paleo Ciabatta is the Italian-style bread you’ve been craving!
With a hearty blend of Paleo-friendly flours, this grain-free ciabatta bread is filled with healthy fiber. For this recipe, we’ll be swapping the usual sugar and oil with apple cider vinegar and eggs to plump up the the ciabatta to a nice, airy consistency!
Making this bread is no harder than mixing wet and dry ingredients together. No fancy equipment or yeast needed!

Use your hands to form the bread into a single oblong loaf on your baking sheet. It will feel spongy, so try not to handle it too much or overmix it. If you prefer, you can also break up the dough to make smaller breads instead of a single loaf.

- Parchment paper
- Large mixing bowl
- Whisk
Ingredients
- 1 ¼ cup almond flour
- ½ cup tapioca flour
- 2 t baking powder
- ¼ cup ground flax
- ¼ t sea salt
- 1 T apple cider vinegar
- 2 large egg whites
- 1 large egg
- ¾ cup boiling water
Instructions
- Preheat oven to 350°F. Prepare a baking sheet with parchment paper.
- Thoroughly sift the flours, baking powder, ground flax and salt together in a large mixing bowl.
- Make a well in the dry ingredients and add the water, apple cider vinegar, whole egg and egg whites. Whisk, slowly incorporating the flour to create a dough. Do not overmix.
- Transfer the batter to the prepared baking sheet, forming it into an oblong shape with your hands.
- Bake for 40 minutes or until the edges are slightly brown, and the bread has risen.
- Remove from the oven and cool on the baking sheet 10-15 minutes.
- Slice and eat!
Tip: If you can’t find ground flaxseeds, use a coffee grinder to turn whole golden flax into a flour-like mixture.
