These creamy, 3-ingredient latte gummies are the perfect pick-me-up treat.
All you need to make these gut-friendly gummy bears is grass-fed gelatin, your favorite espresso, and coconut milk. When heated together and set in a candy mold, you get a smooth and creamy gummy that tastes like a cozy cup of coffee!
Grass-fed gelatin contains amino acids that promote a healthy digestive tract by reducing inflammation and healing the lining of the digestive tract. This is especially helpful for people who suffer from acid reflux, leaky gut, and food allergies.

Note: The espresso in this recipe should be high-quality and organic. Coffee is full of antioxidants and, in moderation, can help promote cardiovascular health and boost cognitive function.
Coconut milk serves as a coffee creamer, lightening the candy without the inflammatory effects of dairy. Tip: Give your can of coconut milk a good shake to incorporate the cream portion with the water. You can flavor these gummies further by adding a pinch of cinnamon, real vanilla bean or pure maple syrup to sweeten.
Start making your java gummies by heating espresso and coconut milk in a saucepan over low heat until just steaming. Sprinkle in gelatin gradually and whisk continuously to help it dissolve without clumping. Use a candy dropper to fill gummy bear molds (or your favorite candy mold) with the espresso mixture and chill in the refrigerator for 30 minutes to 1 hour to set. Pop out the gummies and store in an airtight container in the refrigerator.
