These bakery-style Apple Butter Muffins are drizzled with a coconut frosting for a breakfast best served warm!
There’s no better way to start the day than with a cup of coffee and a fresh batch of muffins. This apple butter muffin recipe is made with a coconut flour base, and sweetened with a touch of honey to enhance the natural apple flavor.
Thanks to the apple butter’s sweet cinnamon flavor, these muffins taste great plain. However, they’re even better with a coconut cream frosting, which gives them a cinnamon roll taste!

To make the frosting, simply blend coconut cream with honey and unflavored gelatin. Gelatin is tasteless, making it an amazing thickening agent for any recipe!
It’s best to add the coconut frosting to the muffins while they’re still warm. The frosting will semi-melt into the muffins as you swirl spoonfuls of it all over them.
Eat these Apple Butter Muffins as a quick breakfast, healthy snack or lunchbox treat! Keep them in the refrigerator up to one week or in the freezer one month.

Apple Butter Muffins with Coconut Honey Frosting
- Muffin tin
- Mixing bowl
- Blender
For the muffins:
- 5 large eggs
- 1 cup apple butter
- ½ t vanilla extract
- 1 T honey
- ¼ cup melted coconut oil
- ¼ t salt
- 1 t baking soda
- ½ cup coconut flour
- Optional: 10 walnut pieces
For the coconut frosting:
- ¼ cup coconut cream
- 2 T unflavored gelatin
- 1 t honey
- Preheat oven to 375°F. Prepare a muffin tin by lightly greasing with coconut oil.
- In a large mixing bowl, combine eggs, apple butter, vanilla, honey and coconut oil until smooth.
- Add salt, baking soda and coconut flour to the batter. Mix until fully incorporated.
- Divide the batter evenly among 10 muffin cavities. Place one walnut piece in the center of each muffin, pressing it with your finger into the batter.
- Bake 12-15 minutes or until muffins are set and slightly brown around the edges.
- While the muffins bake, prepare the frosting by combining coconut cream, gelatin and honey in a blender until thick.
- Remove muffins from the oven and cool in the pan 5 minutes before removing.
- Add the coconut frosting to the muffins while warm by drizzling it on with a spoon in a circular motion. Enjoy!
