Sweet potato rounds wrapped in savory pasture-raised bacon are a match made in snack heaven. Wrap up tender sweet potatoes with crisp smoky bacon for a mouthwatering dish that’s easy to make!
To start, chop your sweet potatoes into one-inch rounds or about the same width in thickness as your bacon strips. Note: It’s important to opt for skinny sweet potatoes instead of large, uneven ones so that it’s easier to wrap the bacon around them. If none are available, slice a larger one into a small, rod-shaped piece and use a veggie peeler to round it out (and save the scraps for hash brown nests).

Next, toss sweet potatoes in avocado oil, paprika, cinnamon, sea salt, and black pepper. You can also add more seasonings like cumin, basil, or a touch of nutmeg to amp up the flavor. When the sweet potato slices are fully coated, wrap half a bacon strip around the edge of each round, slightly overlapping the ends. Tip: I recommend using thick-cut bacon so you can stretch it snugly around. Secure with a toothpick and bake for 35-40 minutes. Ingredients
- 1 lb sweet potatoes
- 2 t avocado oil
- 1/4 t paprika
- 1/4 t black pepper
- 1/4 t sea salt
- 1/8 t cinnamon
- 10 strips pasture-raised bacon, sliced in half
Instructions
- Preheat oven to 400ºF and line a baking sheet with parchment paper.
- Cut sweet potatoes into thick, one-inch rounds (should be thick enough for bacon to wrap around). Toss with olive oil and seasonings in a mixing bowl.
- Wrap half a slice of bacon around the edge of a sweet potato round, overlapping slightly. Secure with a toothpick and place onto prepared baking sheet.
- Bake 35-40 minutes. Set bites onto a paper towel for three minutes to crisp up.
- Serve hot and enjoy!
