Start by making the creamy mint filling. Blend powdered maca with homemade coconut butter, coconut oil, mint extract and a little fresh spinach for that vibrant green color!
To make the maca butter cups, you’ll work in steps to create the layered effect. First, freeze a small amount of melted dark chocolate in mini muffin cups. Tip: Keep the liners in the muffin tins to keep them upright, so nothing spills out. Add the filling to the hardened chocolate bottom, freeze again, and top with the remaining chocolate.

Dark Chocolate Mint Maca Coconut Butter Cups

- Blender
- Double boiler
- Mini muffin pan
- Mini muffin liners
Ingredients
- ½ cup coconut butter
- 2 t maca powder
- ½ t pure mint extract
- ¼ cup spinach
- 2 T coconut oil, divided
- ½ cup dark chocolate, dairy-free, sugar-free
Instructions
- Place the coconut butter, maca powder, pure mint extract, spinach and 1 tablespoon of the coconut oil in a blender. Blend on high until the mixture is thick, smooth and green.
- Melt the chocolate with the remaining 1 tablespoon of coconut oil over a double boiler.
- Place the muffin liners in the cavities of the muffin pan. Use a spoon to fill the muffin liners up halfway with the melted chocolate. Place in the freezer for 5 minutes to harden.
- Remove and place a heaped tablespoon of the maca coconut butter mixture in the liner. Smooth it down and place back in the freezer for 5 minutes.
- Pour the remaining chocolate over the maca coconut butter mixture and place back in the freezer for 5 final minutes. Unwrap from the liners and enjoy!
