No need for multiple pots and pans with this recipe! Simply stir up a dairy-free cheese sauce, pour it over cauliflower florets, and have the Instant Pot cook up a hot and comforting dish in minutes.
Bite-sized pieces of cauliflower stand in for macaroni “noodles” in this veggie-based dish. You can break up the cauliflower to a finer, rice-like texture or leave them larger if you prefer. The veggie florets then get coated in a creamy, dairy-free sauce made with nutritional yeast, almond milk and tangy mustard. The nutritional yeast adds a cheesy flavor that mimics Parmesan – use it to amp up flavor in dishes like zucchini noodles, roasted nuts or Keto Fried Chicken!

Start by stirring together the ingredients for the cheese sauce, and pour it over the cauliflower florets in the Instant Pot. Add the ghee last so that it can melt into the sauce as it cooks. Secure the lid, close the vent valve and set the timer for two minutes.
When the timer goes off, allow the Instant Pot to naturally release before opening the vent valve and unlocking the lid. Wait for the steam to clear, then add the remaining nutritional yeast to thicken the sauce.
Serve hot with chopped scallions and enjoy!

Ingredients
- 1/2 cup unsweetened almond milk
- 3/4 cup nutritional yeast, divided
- 1 T mustard
- 1 t sea salt
- 6 cups cauliflower florets (1 large head of cauliflower)
- 2 T ghee
- 1/4 cup scallions, chopped (optional)
Instructions
- In a small bowl, stir the almond milk, 1/2 cup of the nutritional yeast, mustard and sea salt.
- Add the cauliflower to the Instant Pot and pour the almond milk mixture over the top. Stir in the ghee.
- Secure the lid and close the vent valve. Press manual setting for 2 minutes.
- When the timer goes off, allow the pressure to naturally release before opening the vent valve and unlocking the lid.
- Let the cauliflower cool slightly, then stir in the remaining nutritional yeast. Serve hot with chopped scallions.
