To keep things gluten-free, almond flour is used as a grain-free alternative for conventional flours. Along with having a low-carb count, almonds are high in several minerals and vitamins like magnesium, manganese, and vitamin E. (2) Use it to add a chewy, fluffy texture to all your baked goods.
You’ll also be mixing in fat-burning coconut oil to add moisture to the dough. As a plus, coconut oil also gives you a boost of healthy fatty acids and promotes weight loss. (3, 4)
To get started, combine the two flours, baking soda, and cinnamon in a large mixing bowl. Add in the eggs, almond milk, vanilla extract, and ¼ cup of coconut oil. Stir in most of the blueberries, reserving a handful for later. Continue mixing until a semi-firm dough forms.
Next, shape the dough into four equal-sized fritter patties. Add the reserved blueberries on top and gently press down to bind with the dough. Drizzle the remaining coconut oil on top and bake for 15 minutes. The coconut oil will help make the tops and edges of the fritters nice and crispy. When finished, let cool and serve immediately!
Tip: If not following a strict keto diet, you can drizzle one teaspoon of raw honey or maple syrup on top for just a touch of sweetness.

Ingredients
- 1/2 cup almond flour
- 2 T coconut flour
- 1/2 t baking soda
- 1 t cinnamon
- 2 eggs
- 1/4 cup almond milk
- 1 t vanilla extract
- 1/4 cup coconut oil + 1 T, divided
- 1/2 cup fresh blueberries
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a large mixing bowl, combine flours, baking soda, and cinnamon.
- Add the eggs, almond milk, vanilla extract and ¼ cup of coconut oil to the dry ingredients. Stir in most of the blueberries and reserve a handful for later. Continue mixing until a semi-firm dough forms.
- Form the dough into 4 fritter patties and press the reserved blueberries on top. Drizzle with remaining coconut oil to crisp the outer edges and tops.
- Bake for 10-15 minutes, then remove from oven and let cool. Serve immediately and enjoy!
