These tender lamb lollipops are topped with a vibrant garlic parsley sauce and pan-seared to perfection.
One of my favorite condiments in Argentina is “salsa Provençal,” which is possibly the simplest and tastiest sauce you can make. A mix of parsley, garlic and olive oil is all you need to get a flavor that you will absolutely love. Spread it on any meat you like, but the sauce really sings with lamb!
Start off by sprinkling some salt and drizzling a bit of olive oil over the lamb chops for a simple marinade. Next, chop parsley, mince garlic, and mix them together with olive oil in a bowl to drizzle over the finished lamb chops. It’s important to do this step early on to give the flavors a chance to meld.

After the chops have marinated about half an hour, heat up some avocado oil in a large skillet over medium heat. When the pan is nice and hot, add the lamb chops and sear on each side for about four minutes. Drizzle the meat generously with that delicious garlic parsley sauce, and serve!

- Medium bowl
- Large skillet
Ingredients
- 1 lb lamb chops (about 4 or 5 lamb chops)
- 1 T + ¼ cup olive oil
- 1 t salt
- 1 cup fresh parsley
- 4 large garlic cloves
- 1 T avocado oil
Instructions
- Sprinkle the lamb chops with salt on both sides and drizzle 1 tablespoon of olive oil over them. Marinate them in the refrigerator for at least 30 minutes.
- While the meat is marinating, chop the parsley and mince the garlic.
- Combine chopped parsley, garlic, and ¼ cup of olive oil in a medium bowl, mix well and let it sit for at least 15 minutes.
- Once the meat is ready, heat the avocado oil in a large skillet over medium heat. When the oil starts to sizzle, place the lamb chops in a single layer and let them cook for about four minutes per side.
- Drizzle the prepared garlic parsley sauce over the lamb chops and serve immediately.
Tip: You can add 1 teaspoon of dried garlic and 1 teaspoon of dried parsley to the marinade for an even stronger flavor!
