This savory spread packs four different types of mushrooms – white button, cremini, Portobello, and oyster – as well as walnuts, shallots, lemon juice, garlic, and plenty of olive oil.
Easy to make, this pesto can be whipped up in under 10 minutes with the help of a blender. We swap the herbs in this recipe with mushrooms for an earthier, heartier flavor. You’ll also love how creamy, thick, and spreadable it is without needing to use any dairy or gluten to make it.

To get started, combine the mushrooms, walnuts, garlic, shallots, lemon juice, olive oil, and water together in your blender. Pulse on medium-high until you get a thick brown paste, scraping down the sides with a spatula as needed. If the pesto is too dry, simply add one additional tablespoon of water at a time. You’ll want the consistency to be nice and spreadable.
When finished, season with salt and pepper to taste. You can serve with slices of Paleo bread, vegetable crudités, or even on top of veggie noodles. Enjoy!

- 1 cup white button mushrooms, chopped

- ½ cup walnuts
- 1 T minced garlic
- 1 T minced shallots
- ¾ cup olive oil
- 1 T lemon juice
- ½ cup water
- Salt and pepper, to taste
Instructions
