Mexican food is a favorite of mine, so of course I had to create Paleo quesadillas, complete with Paleo cheese and Paleo tortillas!
These tortillas also make an appearance in our Paleo Enchiladas, and the Paleo cheese is featured in our Paleo Poutine.
Paleo Chicken Quesadillas
Paleo Chicken Quesadillas
Ingredients
- 3/4 cups water
- 1 T unflavored gelatin
- 1/4 cup raw cashews
- 2 T nutritional yeast
- 2 T fresh lemon juice
- 1 T tahini
- 1 1/2 t smoked paprika
- 1 1/2 t onion powder
- 1 t dijon mustard
- 1/2 t sea salt
- 1/4 t garlic powder
- 1/8 t cayenne
- 6 eggs
- 1 cup unsweetened almond milk
- 3 T coconut flour
- 2 t coconut oil
- 1 t arrowroot powder
- ¼ t sea salt
- 1 T coconut oil
- 2 pre-cooked chicken breasts, diced
- 1 red bell pepper, diced
- guacamole & salsa
How To Make It:
1. To Prepare the Paleo Cheese. Grease a medium bowl with coconut oil and set aside.

2. In a small saucepan, bring gelatin and water to a boil for 1 minute and quickly move to a blender. Blend together gelatin mixture, cashews, nutritional yeast, lemon juice, tahini, paprika, mustard, onion powder, sea salt, garlic powder, and cayenne until smooth and pour into the grease bowl.
3. Refrigerate the sauce for 3 hours uncovered. Once solid, grate in a large cheese grater.
4. To Prepare the Paleo Tortillas. Combine the eggs, almond milk, coconut flour, coconut oil, arrowroot powder, and sea salt together in a small bowl and mix well. Allow the batter to sit for 10 minutes and then stir again. The consistency should be similar to crepe batter.
5. Heat a nonstick skillet over a medium heat and melt 1 tablespoon of coconut oil in the pan.
6. Pour ¼ cup of the batter into the skillet. Cook for 1-2 minutes, flip and cook another minute until lightly browned.
7. Place tortilla onto a plate and repeat with the remaining batter adding a little more oil to the pan every 3-4 tortillas or if they begin to start sticking. Set tortillas aside. You should end with about 10 tortillas.
8. To Prepare the Quesadillas. Heat a tortilla over a medium-low heat and sprinkle with the shredded cheese, top with diced chicken and peppers.
9. Serve with guacamole and salsa. Enjoy!
