Ingredients
- 1 large zucchini, sliced to 1/4 inch
- 1/2 cup tomato sauce
- 1 cup Paleo cashew cheese
- 1/2 cup cherry tomatoes, halved
- 1 t dried oregano
- 2 T fresh basil, chopped
Instructions
- Turn oven to broil at 500ºF and line a baking sheet with parchment paper. Place zucchini slices on baking sheet.
- Place a teaspoon of tomato sauce on each slice.
- Top with cheese and cherry tomatoes. Sprinkle oregano on top.
- Broil for 6-8 minutes until cheese is golden brown.
- Top with fresh basil.

Ingredients
- 2 bell peppers, halved and seeds removed
- 1 cup Paleo cashew cheese, grated
- 1/4 cup red onion, diced
- 1/3 cup cherry tomatoes, halved
- 1/2 cup tomato sauce
- 1/2 t garlic, minced
- 1 t dried oregano
- 2 T fresh basil, chopped
Instructions
- Preheat oven to 400ºF and line a baking sheet with parchment paper.
- Place pepper halves on baking sheet. Top each pepper with cheese, tomato sauce, red onion, cherry tomatoes, garlic and onion. Sprinkle with oregano.
- Bake for 10 minutes.
- Turn oven to broil. Broil 5 minutes.
- Garnish with fresh basil.

Sweet Potato Pizza Boats
Ingredients
- 2 sweet potatoes
- 1 cup Paleo cashew cheese
- 1/2 cup tomato sauce
- 1/4 cup pepperoni slices, quartered
- 1 t dried oregano
- 2 T fresh basil, chopped
Instructions
- Heat oven to 400ºF. Wrap sweet potatoes in aluminum foil. Place in oven. Cook 1 hour.
- Carefully remove sweet potatoes from oven. Unwrap to allow cooling. Cool 5 minutes. Slice sweet potatoes lengthwise. Gently scrape to fluff sweet potato from skin. Place on a baking sheet.
- Top with cheese, tomato sauce, pepperoni and oregano. Turn oven to broil. Broil 5-7 minutes.
- Garnish with fresh basil.
Spaghetti Squash Pizza Boats

Spaghetti Squash Pizza Boats
Ingredients
- 1 spaghetti squash, sliced lengthwise, seeds removed
- 2 T olive oil
- 1 cup tomato sauce
- 1 cup Paleo cashew cheese, grated
- 1/2 cup pepperoni slices
- 1 t dried oregano
- 1/2 t dried rosemary
- 2 T fresh basil, chopped
Instructions
- Preheat oven to 400ºF.
- Spray a baking sheet with non-stick spray or line with parchment paper.
- Drizzle spaghetti squash with olive oil. Place spaghetti squash in a pan, cut-side down.
- Transfer to oven. Bake 35-45 minutes depending on size of squash. Most squash will be ready around 40 minutes.
- Remove squash from oven and turn over using tongs. Allow to cool 5-10 minutes. Use a fork to gently loosen spaghetti squash flesh.
- Turn oven to broil. Top squash with tomato sauce, cheese, pepperoni slices and sprinkle with oregano and rosemary.
- Broil 5-7 minutes until cheese is golden brown.
- Top with fresh basil.
