A few other protein-filled ingredients help round out these breakfast cookies. Raw hemp seeds are full of brain-boosting fats and help add chewy texture to the cookies, while grass-fed collagen powder helps support skin, bone, and joint health.
Start by combining all ingredients except for the egg in a mixing bowl. Stir well to combine. Add the egg last and stir well until you have a fluffy cookie dough. Gently form the cookies into a flat, circular shape and place on a baking sheet lined with parchment paper. Tip: Dampen fingertips to prevent dough from sticking. Bake for 15 minutes, or until golden around edges. Cookies will puff slightly as they bake.
Cool the protein breakfast cookies for 5 minutes, then enjoy! Store in the refrigerator and grab one for a healthy breakfast on the go the rest of the week.
