For the inside, sweet potatoes add a hint of sweetness as it crisps in the oven. It’s a great source of potassium and offers plenty of fiber to help sweep away toxins from the gut. Use it to maintain a healthy digestive system or swap with other veggies like asparagus, carrots, or parsnips.
To get started, butterfly the flank steak to create one large thin piece. Tip: You can ask your butcher to butterfly the steak to save on prep time. Slice the steak into two-inch by four-inch strips and season with oregano, sea salt, and black pepper. Sprinkle the herbs on the inside of the steak to ensure they stay put during baking.
Next, cut sweet potatoes into thin fries (about ¼-inch thick) and place four to five pieces on top of each steak strip. Wrap the steak around the fries, overlapping the ends. Secure with a toothpick and brush each bundle with avocado oil. Note: The avocado oil will help keep it from burning at high temperatures, making it great for high-heat cooking. Bake for 35-40 minutes.

Ingredients
- 1 lb flank steak
- 3-4 small sweet potatoes, roughly peeled
- 1/2 t dried oregano
- 1/4 t sea salt
- 1/8 t black pepper
- 1 T avocado oil
- ⅓ cup Paleo steak sauce
Instructions
- Preheat oven to 350ºF and line a baking sheet with parchment paper. Butterfly skirt steak and slice into two-inch by four-inch strips. Brush strips with avocado oil and season with oregano, sea salt, and black pepper.
- Slice sweet potatoes into thin fries and place four to five pieces on top of each steak strip. Wrap tightly and secure with a toothpick. Place onto a baking sheet and bake for 40 minutes.
- Drizzle with steak sauce and serve hot.
