Strawberries are a great source of fiber and blend perfectly with sweet maple syrup. To keep things dairy-free, coconut cream adds a thick consistency with a touch of tropical flavoring. Toss in a bit of fresh basil for a hint of minty zest and bonus antioxidants.

To get started, place a churning bowl inside the freezer for at least 24 hours. In a mixing bowl, whisk together the strawberry purée, maple syrup, and coconut milk. Attach the pre-frozen churning bowl to the ice cream maker and pour in the strawberry mixture.
Next, begin churning for 20 minutes and then add the chopped basil. Note: Make sure the ice cream is not too firm before adding the basil. Continue churning for 25 minutes, or until the ice cream is set.
Serve immediately as a soft serve or let it firm up in in the freezer for 2-3 hours. When ready to enjoy, allow to thaw for 10 minutes. Store leftovers in a freezer-friendly container for up to two weeks.

Ingredients
- 1 14 oz can full-fat coconut milk
- 3/4 cup fresh strawberries, puréed
- ¼ cup maple syrup
- 1/4 cup fresh basil, finely chopped
Instructions
- Place the ice cream churning bowl into the freezer for at least 24 hours.
- In a medium mixing bowl, whisk together the strawberry purée, maple syrup, and coconut cream.
- Remove the churning bowl from the freezer and attach to the ice cream maker. Pour the strawberry mixture into the machine and begin churning for 20 minutes.
- Add the basil and continue churning for an additional 25 minutes, or until set.
- Serve immediately for a soft serve or let it firm up in in the freezer for 2-3 hours.
