It’s made without any additives and only requires three simple ingredients: sweet potato purée, full-fat coconut cream, and pure maple syrup. It’s as easy as it gets and you don’t even need an ice cream maker, just a blender!

To get started, scoop out the solid part of the coconut cream and reserve the rest for another recipe (like this creamy Dark Chocolate Banana Milkshake). Combine sweet potato purée, coconut cream, and maple syrup together in a blender, until you get a smooth homogeneous mixture.
Next, pour the mixture into a clean loaf pan and cover with aluminum foil. Place in the freezer for at least six hours or let it chill overnight. Before scooping into the ice cream, allow it to thaw at room temperature for at least 20 minutes. Once thawed, scoop and enjoy!

Ingredients
- 2 cups sweet potato purée
- 4 14-oz cans of full-fat coconut cream
- 3 T maple syrup
Instructions
- Scoop out the solid part of the coconut cream from the top of the can. Reserve the rest for another recipe.
- Combine the sweet potato purée, coconut cream, and maple syrup in a blender and process until you get a smooth homogeneous mixture.
- Pour the mixture into a loaf pan and cover with aluminum foil. Then, place in freezer for at least six hours until solid.
- Let the ice cream thaw for at least 20 minutes and use a scoop dipped in warm water to serve.
Tip: This recipe uses maple syrup as a natural sweetener, but you can swap it out for raw honey (if you are not following a vegan diet).
