To keep this recipe Paleo, the traditional grains are replaced with riced cauliflower. This simple veggie easily takes on the flavors around as it simmers. For easier prep, you can also shop for pre-packaged cauliflower rice at your local health food store.
To get started, place the cauliflower florets into the food processor and grind into small “couscous” granules. Add the cauliflower to a large skillet over medium heat and stir in the olive oil, sliced almonds, cranberries, apple juice, turmeric, and honey. Let everything simmer for about five minutes or until the cauliflower is al dente. Season with salt and pepper and serve immediately! You can also keep leftovers in the fridge for up to one day.

Ingredients
- 4 cups cauliflower florets
- 1 t olive oil
- ¼ cup sliced almonds
- ¼ cup dried cranberries
- ¼ cup apple juice
- 1 T ground turmeric
- 1 T honey
- 4 T green onions, chopped
- 2 T fresh dill, roughly chopped
- Salt and pepper, for seasoning
Instructions
- Place the cauliflower florets into a food processor and grind the cauliflower in batches, about a third at a time. Pulse until it is the size of large couscous grains and set aside.
- In a large skillet over medium heat, combine the cauliflower grains with olive oil, sliced almonds, cranberries, apple juice, turmeric, and honey. Mix well and cover, then simmer for about 5 minutes. You’ll want to make sure the cauliflower is al dente.
- Add the green onion and dill, then adjust the seasoning as needed.
- Serve as a stand-alone dish or as a side and enjoy!
