The Paleo white chocolate in this recipe is made from raw cacao butter (you can find this at most health food stores). When combined with coconut oil, honey and vanilla, it creates a healthy white chocolate perfect for creating crispy holiday bark!
Pomegranate and cacao nibs make a wonderfully delicious treat in this recipe. All you need is 15 minutes to melt the ingredients together before sticking the batter in the freezer to set. This works best using a double boiler, or a simple glass bowl over a pot of simmering water.
Keep in mind that the cacao butter does take several minutes to melt. As it’s melting, stir the ingredients to help it melt faster. The batter should become thick and creamy. If it starts to separate, pour the batter into a blender and blend on high until fully immersed.

Once the bark batter is melted and well combined, pour it onto a baking sheet lined with parchment paper and spread it into an even layer. Then sprinkle pomegranate seeds and cacao nibs over the top and gently press them into the batter with your fingers. Next, all you need to do is chill the batter in the freezer for about 20 minutes to set.
When it’s ready, break the bark into large chunks. Enjoy them right away or store them in the fridge until you’re ready for a sweet treat!

Ingredients
- ½ cup raw cacao butter
- ⅓ cup coconut oil
- 1 T honey
- 1 t pure vanilla extract
- ½ cup pomegranate seeds
- 1/8 cup cacao nibs
Instructions
- Melt the cacao butter, coconut oil, honey and vanilla in a glass bowl over a double boiler, stirring often, for about 10-15 minutes.
- Transfer the batter onto a baking sheet lined with parchment paper and smooth into a thin, even layer.
- Sprinkle pomegranate seeds and cacao nibs over the top and gently push them into the batter with your fingers.
- Place in the freezer for 20 minutes to set.
- Remove from the freezer and break into chunks.
